Halloween Bean Dip

Ingredients
  • 29 ounce can black beans rinsed and drained
  • ¾ cup Ro-Tel Original drained
  • cup red onion finely diced
  • 1 orange bell pepper diced
  • 1 jalapeno seeded and minced
  • cup cilantro chopped
  • 1 large clove garlic minced
  • 1 lime zested and juiced
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
Instructions
  • Combine the black beans, Ro-Tel, red onion, bell pepper, jalapeno, cilantro, garlic, lime zest and juice in a large bowl. Toss to combine.
  • Season the bean dip with salt and pepper and mix well.
  • Taste for seasonings and adjust as needed with extra salt or pepper, lime or even hot sauce. Serve with blue corn chips.
