This Halloween Bean Dip packs bold flavors and a color palette that brings all the Halloween vibes without the gimmicks. Ingredients
- 29 ounce can black beans rinsed and drained
- ¾ cup Ro-Tel Original drained
- ⅓ cup red onion finely diced
- 1 orange bell pepper diced
- 1 jalapeno seeded and minced
- ⅓ cup cilantro chopped
- 1 large clove garlic minced
- 1 lime zested and juiced
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
- Combine the black beans, Ro-Tel, red onion, bell pepper, jalapeno, cilantro, garlic, lime zest and juice in a large bowl. Toss to combine.
- Season the bean dip with salt and pepper and mix well.
- Taste for seasonings and adjust as needed with extra salt or pepper, lime or even hot sauce. Serve with blue corn chips.
