Ingredients
- 3 cups cabbage shredded
- 3 cups red cabbage shredded
- 1 1/2 cups carrot peeled and chopped
- 3/4 cup green peppers diced
- 3/4 cup red pepper diced
- 6 scallions thinly sliced
- 3/8 cup tarragon vinegar
- 3/8 cup sugar
- 1 1/2 tablespoons dijon mustard
- 1 1/8 cups olive oil extra virgin
- salt and pepper to taste
Instructions
- In a medium bowl, mix tarragon, vinegar, sugar, Dijon mustard, pepper, and olive oil, whisking in oil a little at a time.
- Combine green and red cabbage with carrots, peppers, and scallions.
- Toss with dressing to taste.
