Tri Color Cold Slaw

Ingredients
  • 3 cups cabbage shredded
  • 3 cups red cabbage shredded
  • 1 1/2 cups carrot peeled and chopped
  • 3/4 cup green peppers diced
  • 3/4 cup red pepper diced
  • 6 scallions thinly sliced
  • 3/8 cup tarragon vinegar
  • 3/8 cup sugar
  • 1 1/2 tablespoons dijon mustard
  • 1 1/8 cups olive oil extra virgin
  • salt and pepper to taste
Instructions
  • In a medium bowl, mix tarragon, vinegar, sugar, Dijon mustard, pepper, and olive oil, whisking in oil a little at a time.
  • Combine green and red cabbage with carrots, peppers, and scallions.
  • Toss with dressing to taste.
  • Refrigerate until ready to serve.
